50 gm butter
1 tbsp coconut oil
1 cup brown sugar
1 cup wheat flour
1 cup oats powder
1 tsp of mixed pd of nutmeg, cinnamon,ginger
2 med carrots – grated
1 tsp baking pd
pinch salt
pinch chilli flakes ( op)
1/2 cup milk
2 tbsp grated coconut
1/2 tsp vanilla essence


Pre heat oven at 180 degrees


Mix butter, sugar and coconut oil
Add milk with vanilla essence and mix well
Sieve wheat flour, baking pd and spice powders
Add the oats pd n salt and mix well
Now add carrot n coconut and mix thoroughly
Add chilli flakes and give a light mix
Scoop this batter into small cupcake moulds
Bake at 180 degrees for 30 to 40 mins
