INGREDIENTS

100 gms dark chocolate
1 cup brown sugar
3/4th cup oats powder
3/4th cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
3/4th cup pure coconut oil
a pinch of salt
1 med. beetroot – grated
1 tbsp chopped almonds
1/2 tsp chilli flakes

METHOD;

Melt chocolate in double boiler
Add coconut oil and sugar n mix well
Add beetroot and oats powder
Add baking powder and baking soda to all purpose flour and add this to the above mix
Add remaining ingredients except nuts and chilli flakes and mix well
Grease baking tray
Pour cake mix into the greased tray
Top with nuts and chilli flakes
Bake in a preheated oven at 180 degrees for 40 mins or till toothpick comes out clean.

PRESSURE COOKER METHOD OF BAKING

Put 2 cups of rock salt in the cooker first
Heat for a few minutes
Gently place the cake tray with batter into the pressure cooker,on top of the rock salt
Close lid. DO NOT USE THE WHISTLE FOR THE PRESSURE COOKER
Let this cook for 25 mins
Check with toothpick. If it comes out clean its cooked
