INGREDIENTS:

2 med.size potatoes
2 eggs
1/2 + 1/2 tsp mixed Italian herbs
1 tbsp Cilantro – Chopped
1/4 cup grated cheese
Pepper pd as req
Salt as req
Oil as req

METHOD:

Wash, peel and grate potatoes
Heat a non stick fry pan
Pour in little oil
Spread the grated potato in the fry pan
Sprinkle pepper pd, salt and Italian herbs over potato
Stir and let potato brown a little
Beat eggs with a little salt
Pour them over potato
Reduce heat
Now sprinkle little pepper pd, herbs and salt over eggs
Take grated cheese and spread it over eggs
Top this with chopped cilantro
Cover and cook on very low heat for about 10 mins
See that the bottom part of egg turns brown and the cheese start to melt.
Remove from heat and serve hot
Cut it into wedges and eat.

NOTE:
You can top this with red chilli flakes or chopped green onions or any spice of ur choice
Serve this with toasted bread
Tomato ketchup or sweet chilli sauce will taste good with this too
